Dr. Hoover graduated from the University of Arizona in 1996 with a B.S. in Microbiology and worked in a lab dedicated to diabetes research. She earned a Doctorate of Osteopathy degree in 2004 at Western University of Health Sciences. She completed Family Medicine residency at Naval Hospital Bremerton’s Puget Sound Program in 2007 where she also served as Chief Resident. After residency, Dr. Hoover was deployed with Combat Logistics Battalion 5 in Iraq where she provided care for her marines and soldiers as well as humanitarian care to local inhabitants.
Dr. Hoover moved to OR in 2012 and after 10 years serving patients in family medicine medicine, she began additional training to help prevent disease, control weight and improve cardiometabolic health. Her goal is to use her knowledge and medical experience as a Diplomate of the American Board of Obesity Medicine to help patients take back control of their weight and overall health.



Rachelle Mathios graduated Cum Laude from Oregon State University with a Bachelor of Science. She received her initial coaching certification from the Wellcoaches School of Coaching in 2020. She has since completed additional training and certification with the American College of Lifestyle Medicine, Whole Food,Plant-Based Nutrition, Culinary Medicine and Culinary Coaching (CHEF), and Group Coaching and she received her board certification from the National Board for Health and Wellness Coaching (NBHWC) in the spring of 2021.
After devoting more than a decade to raising her family and gaining experience across various fields, she worked as a medical assistant for a local family physician. During this time, she realized her true calling was Health and Wellness Coaching—where she could combine her passion for health with her deep compassion for individuals looking to prevent or reverse lifestyle-related chronic disease.
She blends positive psychology, behavior change science, andthe pillars of lifestyle medicine to create a practical, sustainable path to better health. Grounded in a “food is medicine” philosophy, her work incorporates Whole Food Plant-Based (WFPB) nutrition, fasting, and personalized lifestyle strategies to help clients improve conditions such as obesity, type 2 diabetes, hypertension, and heart disease, while also supporting weight loss, longevity, and perimenopause.

Rachelle and her husband, Peter, have shared over 28 years of marriage and a deep love of the outdoors. Much of their free time is spenttraveling and exploring natural beauty—trail running, hiking, skiing, camping, gardening, and observing wildlife, an interest closely tied to Peter’s work as a wildlife artist. She treasures time with their two adult children and their spouses, as well as with family and friends. In her quieter moments, she enjoys puttering, reading, researching, and making space for reflection."
